Sharing platters are an excellent way of creating an informal, relaxed menu option which lets customers decide how much or how little they want without the hassle of serving. They can be budget friendly or extravagant depending on the occassion and allow you to get creative in the kitchen. 

Ingredients

  • ½ tin Chickpeas
  • 2 tbsp Tahini Paste
  • 1 Lemon
  • ¼ Cucumber
  • 125g Cherry Tomatoes
  • 50g Black Olives
  • 2 tbsp Paprika Oil
  • 1 packet Flatbread
  • 100g Feta Cheese
  • 30g Rocket

Method

  1. Blitz together the drained chickpeas, tahini paste, lemon juice. Season with salt and pepper.
  2. Chop the cucumber and tomato and mix together.
  3. Spread the hummus onto a plate / platter.
  4. Sprinkle the cucumber and tomato mix on top.
  5. Slice the olives and spread over the tomato mix.
  6. Crumb the feta and spread over the top.
  7. Drizzle the paprika oil over the top.
  8. Garnish with the rocket in the middle with ½ lemon and a few sprigs of dill.
  9. Serve the flatbread on the side.

Ingredients

  • 1 unit Roasted Duck
  • 1 packet Pancakes for Crispy Duck
  • ½ unit Cucumber
  • 1/3 bunch Scallions
  • 4oz Hoi Sin Sauce
  • 2g Roasted Black Sesame Seeds

Method

  1. Pre heat oven to 180.
  2. Roast duck until the skin is golden and crispy.
  3. Cut the cucumber into thin strips.
  4. Cut the scallions length ways into thin strips.
  5. When the duck is ready, chop into thin strips and place onto one side of the plate.
  6. Place the scallions and cucumber on the other side.
  7. Sprinkle the sesame seeds on top of the duck.
  8. Place the ramakin of hoi sin sauce in the middle and serve with the pancakes.
