Sharing platters are an excellent way of creating an informal, relaxed menu option which lets customers decide how much or how little they want without the hassle of serving. They can be budget friendly or extravagant depending on the occassion and allow you to get creative in the kitchen.
Ingredients
½ tin Chickpeas
2 tbsp Tahini Paste
1 Lemon
¼ Cucumber
125g Cherry Tomatoes
50g Black Olives
2 tbsp Paprika Oil
1 packet Flatbread
100g Feta Cheese
30g Rocket
Method
Blitz together the drained chickpeas, tahini paste, lemon juice. Season with salt and pepper.
Chop the cucumber and tomato and mix together.
Spread the hummus onto a plate / platter.
Sprinkle the cucumber and tomato mix on top.
Slice the olives and spread over the tomato mix.
Crumb the feta and spread over the top.
Drizzle the paprika oil over the top.
Garnish with the rocket in the middle with ½ lemon and a few sprigs of dill.
