Violife Rosti Pizza

INGREDIENTS
- 1 pack Violife Grated Original
- 1 kg potatoes, peeled
- 150g cherry tomatoes, halved
- 3 tbsp flour
- 1 tsp salt
- 2 tbsp olive oil
- Freshly ground pepper
- A handful of fresh basil leaves
METHOD
- Grate the potatoes, place in a clean tea towel and squeeze out the moisture. Place in a large bowl, add the flour and salt and stir. Add the olive oil and form the mixture into a ball shape.
- Line a baking tray with baking paper. Spread out the potato mixture into a circle of roughly 20cm diameter.
- Place in the oven and cook for 40-45 minutes at 180°C.
- Remove from the oven, top with Violife Grated Original and cherry tomatoes and bake for a further 10 minutes until the Violife is melted nicely.
- Garnish with fresh ground pepper and basil leaves.
