Blueberry Vanilla Cake

INGREDIENTS


  • Corn Fed Chicken Supreme 
  • Greengrocers Broccoli
  • Country Range Potato Dauphinoise In Portions
  • Cream sauce

For The Sauce:

  • 250ml Fresh Veal Stock
  • 50ml Strathroy Double Cream
  • 1.5 tsp Country Range Pink peppercorns
  • 20ml Brandy

METHOD 


  1. Pre heat oven to 180c
  2. Place the dauphinoise potato on a tray and place in oven for 18-20 minutes
  3. Heat up the frying pan on medium to high heat. Add 1 tbsp of oil and place the chicken breasts skin side down until golden colour then flip around to seal the bottom and place in the oven until cooked.
  4. Place a saucepan of salted water on the heat and bring to the boil.
  5. Trim the ends of the broccoli and cook until tender.

For The Sauce:

  1. Heat the veal stock in the pan and bring to the boil.
  2. Add the brandy and pink peppercorns and allow to thicken slightly.
  3. Take off the heat and stir in the cream.
