Blueberry Vanilla Cake

INGREDIENTS
- Corn Fed Chicken Supreme
- Greengrocers Broccoli
- Country Range Potato Dauphinoise In Portions
- Cream sauce
For The Sauce:
- 250ml Fresh Veal Stock
- 50ml Strathroy Double Cream
- 1.5 tsp Country Range Pink peppercorns
- 20ml Brandy
METHOD
- Pre heat oven to 180c
- Place the dauphinoise potato on a tray and place in oven for 18-20 minutes
- Heat up the frying pan on medium to high heat. Add 1 tbsp of oil and place the chicken breasts skin side down until golden colour then flip around to seal the bottom and place in the oven until cooked.
- Place a saucepan of salted water on the heat and bring to the boil.
- Trim the ends of the broccoli and cook until tender.
For The Sauce:
- Heat the veal stock in the pan and bring to the boil.
- Add the brandy and pink peppercorns and allow to thicken slightly.
- Take off the heat and stir in the cream.
